you - is more colloquial
one - is more formal.
they - means that the person who is speaking and the people who are listening to the speaking person are not included.

They say he left his husband. - Man sagt, sie hätte ihren Mann verlassen.
One needs money to buy something. - Man braucht Geld um etwas kaufen zu können.
You cannot understand this language. - Diese Sprache kann man nicht verstehen.

Kleine Korrektur. Deine Variante ist natürlich auch sehr gut möglich, hätte dann aber nicht zu der Übersetzung gepasst.
