Presentations/formal speeches short forms?
Is it better to use short forms(I'm,you're...) in formal speeches and presentations or the long forms (I am, you are...)?

But in order to make your presentation livelier and more interesting, you might want to use short forms in the spoken part. But make sure you don't use any colloquialisms.

However, I have a small addition to make here. Even though in German schools 's is taught to be a contraction of "is" and "has" that's kind of a British thing. There are a lot of dialects where 's means "is" exclusively which makes it an exception to other forms taught in school that are understood by all English speakers. So you should probably not use 's to mean "has" in formal contexts.
