Jeans ist ein Pluralwort, d.h. dein erster Vorschlag ist richtig: "they are white and I love them"
Du kannst auch "a pair of jeans" schreiben, in welchem Fall dann "it (the pair of jeans) is white and I love it" stimmen wuerde, dass sich die Einzahl in deinem Beispielsatz nicht mehr auf die Jeans bezieht sondern auf das Paar.
